Mango-Pineapple Salsa


I like to cook more than the average bird, but when summer hits my un-airconditioned apartment, one of the last things I feel like doing is sweating over the stove. That’s why I really love cool dishes that need little more than a little dicing and tossing. This fruity salsa works great with grilled chicken, salmon or a big bowl of salty tortilla chips.

-1 medium ripe mango, peeled and diced
-2/3 cup diced fresh pineapple
-2 tbsp minced red onion
-1 minced, seeded jalapeno (keep the seeds in if you like a spicy salsa)
-juice of 2 limes
-2 tbsp chopped cilantro
-1/8 tsp kosher salt
-1/8 tsp black pepper
